I think it's one of my new favorite soups. and I love soup!!!! I used a raw carcass which made this very flavorful (versus cooked carcass) and an additional dash of salt but no other alterations to the recipe. Season the chowder with salt, pepper and garlic powder, and stir well. In a soup kettle, heat chicken stock.

- In a large saucepan, saute the onion and celery in butter until tender.
- Stir in flour until well blended.
- Gradually add chicken broth.
- Stir in rice, chicken, salt and pepper.
- Bring to a boil over medium heat; cook and stir until thickened. Stir in evaporated milk. Cook about another 5 minutes.
- Stir in parsley.
