- It's 500 gms of karela (Bitter Gourd / Melon), grated.
- You need 2 tbsp. of mustard oil.
- You need 1 tsp. of kalonji (nigella seeds).
- It's 2-3 of dry red chilies.
- Prepare 1/4 tsp. of asafoetida (hing).
- You need 1/2 tsp. of turmeric powder.
- You need 6-7 of garlic cloves, chopped.
- It's 1 tsp. of ghee to serve.
- It's to taste of salt.
Slice each piece of bitter gourd into fairly thin half-moon shape. Transfer them to a colander and sprinkle the salt over. Shake the bag or bowl so that the seasoning is distributed evenly over the pieces. Heat the oil in a wok, and fry the bitter gourd pieces in batches to a crisp brown.
