- In a med size pot cook your pasta til al dente..
- Meanwhile in a small heavy bottom skillet melt the butter, whisk frequently til foam starts to subside. Keep stirring til butter starts to brown. This takes about 10 min or so but don't walk away cuz the butter will burn!!! (burnt butter isn't good!).
- Once pasta is done take it off the heat, do not drain! Using a pair of tongs add pasta into a large pasta bowl and pour butter and the 1/4c pasta water. Stir well. Add cheese and as much pepper as you like and turn pasta to coat. Add more if the pasta water if needed. Top with your favorite topping or leave as-is!!.
